The sensory experience opens with an intriguing blend of citrus-forward esters, spicy yeast phenols, and the earthy, dark depth of raw chocolate. On the palate, a signature acidity cuts through a medium-bodied frame, leading into a unique interplay of fruity pome notes and the subtle, lingering heat of chiles picantes. The finish is remarkably dry and effervescent, leaving behind a piquant warmth and a refined cacao bitterness that deviates beautifully from traditional farmhouse expectations while maintaining a high attenuation and lively carbonation.
Appearance. Deep amber to copper in color with a long-lasting, dense, rocky ivory head. Unfiltered and hazy with aggressive effervescence and prominent Belgian lacing.
Aroma. High intensity; a marriage of spicy black pepper phenols and citrusy esters like orange peel and lemon, layered over a distinct dark chocolate and earthy cacao character. Subtle earthy hop notes and a faint hint of dried chili pepper skin are present.
Taste. Initial impression of spicy yeast and tart citrus, followed by the dry bitterness of raw cacao. Nuanced fruity notes of apple and pear are punctuated by a rising, piquant chili heat. Grainy malt is present but secondary to the spicy, slightly acidic fermentation character. Finishes very dry and bitter with a lingering spicy aftertaste.
