This Oak-Aged Saison presents a sophisticated interplay between rustic grains and modern hops. Utilizing Salish Blue wheat from Skagit Valley Malting, the base is soft and textured, further rounded by seven months in oak puncheons. The wood imparts a gentle vanillin sweetness that supports a vibrant dry-hop of Idaho Gem. This hop variety drives a distinctive fruit profile of red currant, raspberry, and zesty grapefruit. The fermentation remains classically expressive with peppery phenols and stone fruit esters, finishing bone-dry. Elegant and drinkable, it balances the structure of old-world wood aging with bright, contemporary fruit notes.
Appearance. Deep gold (approximately 7 SRM) with a soft haze from the Salish Blue wheat; features a long-lasting, dense, rocky ivory head with persistent Belgian lacing.
Aroma. High intensity with a complex blend of red currant, raspberry, and grapefruit citrus from Idaho Gem hops. Spicy, peppery yeast phenols and delicate vanillin from oak puncheons complement a grainy, raw wheat malt character.
Taste. Initial fruit impression of raspberry and grapefruit, transitioning to a soft, grainy malt palate. Moderate hop bitterness is balanced by peppery yeast and a touch of woody vanillin. Finishes bone-dry with a lingering, spicy aftertaste.
Mouthfeel. Medium-light body with a creamy, soft texture provided by the wheat and seven months of oak maturation. Very high carbonation creates an effervescent, lively mouthfeel. Light alcohol warmth is well-integrated.
