Almota is a nuanced Saison that celebrates the rustic terroir of eastern Washington grown malted grain through the lens of traditional farmhouse brewing. This oak-aged ale presents a complex sensory tapestry, blending moderate fruity esters of apricot and lemon peel with a signature spicy yeast profile reminiscent of cracked black pepper. The extended time in oak adds a subtle layer of vanilla and dry wood tannin, grounding the beer’s bright effervescence. A distinctively grainy malt backbone provides a soft, cereal-like character that is quickly overtaken by a firm, refreshing bitterness and a bone-dry, lingering finish characteristic of the style.
Appearance. Pale gold with a slight orange hue (6-7 SRM). Displays a dense, rocky ivory head with excellent retention and delicate Belgian lacing. Unfiltered and naturally hazy.
Aroma. Moderate to high intensity. Aromas of citrus and stone fruit dominate, supported by a spicy, peppery yeast character. A soft, grainy malt presence from the local grains is complemented by subtle toasted oak and a hint of vanilla.
Taste. Initial impressions of bright lemon and pear are followed by a grainy, rustic malt profile. Moderate hop bitterness provides balance to the fruitiness. The fermentation character is spicy and dry, leading into a very high attenuation with a clean, peppery aftertaste and faint woody notes from the oak aging.
Mouthfeel. Medium-light body with very high carbonation, creating an effervescent, lively sensation. Minimal alcohol warmth is present. A slight tannic dryness from the oak adds structure without astringency.

Brassée avec 4 malts différents : Baronesse Pilsner, épeautre, blé “Raw Red Russian”, Purple Egyptian Pale.
Élevée d’abord 4 mois en foudre de chêne du Missouri (qui développe d’étonnantes notes d’aneth), avant un transfert de 3 mois supplémentaire dans des barrique de chêne plus neutre. 3 barriques différentes sont sélectionnées pour procéder à l’assemblage.
Fermentation via assemblage maison de bactéries et levures sauvages.
