This Double IPA presents a vibrant sensory profile defined by an immense dry-hop charge of Citra and Simcoe. Despite its potent strength, the beer maintains a remarkable drinkability. A complex malt bill featuring Maris Otter, Golden Promise, and oats provides a sturdy, silky foundation that carries intense notes of ripe peach and bright citrus. The aromatic profile is saturated with tropical fruit and resinous pine, leading into a flavor experience that balances hop intensity with a surprisingly dry finish. The high alcohol is masterfully hidden within a lush, velvety texture, delivering a powerful yet refreshing expression of a modern Triple IPA.
Appearance. Straw to deep yellow (4-6 SRM). Pours with a thick, persistent white head that leaves significant lacing. Exhibits a characteristic haze from the heavy use of oats, wheat, and aggressive double dry-hopping.
Aroma. Intense hop aroma dominated by stone fruit and tropical character. Distinctive peach notes from the Simcoe and Citra combination are prominent, backed by layers of grapefruit zest and subtle pine resin. A clean, grainy malt sweetness from the Maris Otter and Golden Promise provides light honey-like support.
Taste. Initial punch of juicy peach, passion fruit, and citrus oils. The hop flavor is complex and saturating, supported by a soft, bready malt backbone. Bitterness is firm and assertive but lacks harshness. It transitions into a clean, dry finish with a lingering resinous and fruity aftertaste that belies its high gravity.
Mouthfeel. Medium-full body with a notably silky and creamy texture derived from the inclusion of flaked oats and wheat. Carbonation is moderate. A well-integrated, smooth alcohol warmth is present but restrained, avoiding any solventy sensations.
