A vibrant and velvety Double IPA, Infinite Entropy showcases the Equilibrium house character through a collaborative lens with Sand City. Built on a soft foundation of flaked oats and flaked wheat, the sensory profile is dominated by a deliberate dry-hopping of Mosaic, Galaxy, and Rakau. Intense aromas of succulent mango, syrupy orange slices, and zesty lime lead into a saturated palate of papaya, passionfruit, and mandarin orange. The Mosaic contribution introduces complex blueberry notes, while Rakau adds a playful lime fun dip and watermelon finish. It is a lush, tropical experience that balances high hop saturation with a smooth, creamy delivery.
Appearance. Deep yellow color (5–7 SRM). Opaque and hazy appearance with a dense, persistent white head that leaves significant lacing on the glass.
Aroma. High intensity hop aroma featuring prominent tropical fruit notes of mango and papaya, coupled with syrupy orange and sharp lime zest. Supportive neutral, grainy maltiness from the flaked grains and a clean fermentation profile with subtle berry-like hop esters.
Taste. Explosive hop-forward flavors of passionfruit, mandarin orange, and watermelon. Distinctive blueberry notes from the Mosaic hops pair with a candy-like lime acidity. The bitterness is firm but smooth, avoiding harshness while supporting a rich, fruit-forward profile. Finishes with a lingering tropical and citrus aftertaste.

A roll of the dice dictated the dry hop schedule and ratios for our leg of the collaboration, and we used Mosaic, Galaxy, and Rakau. Infinite Entropy pours a hazy and deep yellow with aromas of mango, syrupy orange slices, and lime. Flavors start off creamy and lead into pops of papaya, mandarin orange, passionfruit, watermelon and lime fun dip candy, and complex blueberries with an explosive #EQjuice profile. We are really digging this beer and it begs the question: Is anything in the universe truly random or is there always an underlying order and this beer was meant to be? Delta S tends towards infinity.
