Elav Aeresis
This Specialty IPA presents a striking sensory contrast, blending the assertive hop character of a Black IPA with exotic spice additions. The profile is anchored by balsamic and resinous hop notes that intertwine with deep toasted malt layers, reminiscent of licorice and mild cocoa. The addition of Indian black pepper provides a distinctively "heretical" spicy heat that lingers on the palate, complemented by subtle aromatic nuances of coriander and bitter orange peel. With its mahogany-tinted black hue and smooth, rounded mouthfeel, this brew balances intense bitterness with a complex, toasted depth and a uniquely warming, spicy finish.
Appearance. Deep black with mahogany and brown reflections; crowned by a dense, persistent beige head with fine lacing.
Aroma. High intensity; prominent resinous and balsamic hop notes layered over toasted malt scents of licorice and dark bread. Secondary aromas include spicy black pepper, floral coriander, and a hint of bitter orange zest.
Taste. Initial toasted malt flavors of licorice and toast are quickly joined by a firm, resinous hop bitterness. The mid-palate reveals spicy pepper heat and citrusy orange peel. It finishes very dry and persistent, with a lingering bitterness and a notable spicy warmth from the pepper in the aftertaste.
Mouthfeel. Medium body with a formidable roundness and smooth texture. Carbonation is soft and moderate. A distinct spicy tingle from the pepper accompanies a light, well-integrated alcohol warmth.
