Poured with a hazy golden glow, it immediately releases high-intensity aromas of fresh Apricot and juicy Nectarine, backed by the distinctive hay and horse-blanket funk of wild yeast. The integration of Trebbiano wine and skin contact introduces a sophisticated vinous dimension, offering honeyed floral notes and a structured, grape-skin tannin. On the palate, a sharp lactic acidity provides a bright backbone, slicing through the stone fruit sweetness and finishing bone-dry. The barrel aging adds a subtle oak depth, rounding out this elegant, fruit-forward, and highly expressive wild ale.
Appearance. Deep golden to amber-orange (8–12 SRM) depending on fruit saturation; hazy to cloudy appearance with a thin, white head that dissipates rapidly, leaving minimal lacing.
Aroma. High intensity; dominant notes of ripe apricot and nectarine peel. Deep funky character featuring barnyard, hay, and light goaty notes. The Trebbiano grapes add a floral, white wine vinous quality with hints of honey and lemon zest. No hop aroma; malt is restricted to a light bready, wheaty background.
Taste. Sharply acidic and sour initial impression. Intense stone fruit flavors of apricot and nectarine blend with white wine grape character and light oak tannins. Low bready malt flavor. Bitterness is below the sensory threshold, with sourness and skin-contact tannins providing the balance. Finishes very dry and tart with a lingering fruity funk.
Mouthfeel. Medium-light body with a noticeable puckering acidity. Carbonation is moderate, providing a lively prickle on the tongue. A slight alcohol warmth is present due to the 7.3% ABV, complemented by a light, grape-skin astringency.
