This Wild Specialty Beer, a collaboration between Drekker and Ārpus Brewing Co., presents a kaleidoscopic sensory profile centered on a trio of red fruits. Dominant notes of tart raspberry and tayberry collide with the softer, sun-ripened sweetness of strawberry. The addition of marshmallow and vanilla creates a whimsical, confectionary layer reminiscent of cotton candy, smoothing out the vibrant acidity. Its profile is a deliberate tangled tornado of tart and sweet, where the lactic snap of the wild fermentation is rounded by a lush, creamy finish.
