Blonde Ale 3.8 º
Zena is an approachable Blonde Ale that balances delicate malt complexity with a vibrant British fruit basket profile. Built on a base of extra pale Maris Otter and Scottish oats, the beer offers a foundation of freshly baked bread and soft graininess. Saphir hops added during the mash introduce subtle orange citrus and tangerine notes, while a kettle combination of Endeavour and Pilgrim delivers layers of brambles, red berries, and pear. A clean fermentation allows these fruity esters and a refined, grassy bitterness to shine, resulting in a refreshing, light-bodied session ale that remains flavorful and nuanced despite its lower alcohol content.
Appearance. Pours a light yellow to pale gold (4 SRM) with excellent clarity. It is topped by a low to medium white head with fair retention and light lacing.
Aroma. Moderate aroma of freshly baked bread and grainy malt from the Maris Otter. The hop profile is expressive with notes of lemon zest, orange citrus, and a background of red berries and pear. Low fruity esters complement the hop character, remaining clean and inviting.
Taste. Initial soft maltiness featuring notes of biscuit and bread. Hop flavors are prominent but not aggressive, showing sweet tangerine, brambles, and a distinct grassy bitterness. The balance is slightly towards the hops and fruit, yet the Scottish oats provide a smoothing grain character. Finishes medium-dry and clean with a lingering hint of orchard fruit.
Mouthfeel. Medium-light body with a subtle creaminess from the addition of oats and dextrin malts. Moderate to high carbonation provides a crisp, refreshing snap. No alcohol warmth is perceived.

An easy-going, light and fruity blonde ale. Notes of sweet tangerines, lemon zest, brambles, red berries and pear. Freshly baked bread smells and a decent, grassy bitterness. Extra pale Maris Otter malt is bulked up by Scottish oats, Cara and dextrin malts. Saphir hops were added to the mash for delicate orange citrus flavours. Then, a go-to Dookit Brewing hop combination of Endeavour and Pilgrim was added in the kettle providing a British fruit basket of flavours. Co-fermented with K-97 and Windsor yeast for extra fruity and fresh bread esters. Those with keen memories may remember Zana, the Summer Ale which was Dookit’s first release from our Tollcross home. This recipe is close in nature to Zana: the lager grist and yeast has been replaced by a malt base and yeasts to make for the best session strength ale! Named after my grandmother Zena, who’s kindness after passing during the pandemic meant I could realise my dream of opening a brewery. Artwork by my other Grandmother Katie, who sadly I never got to know properly, but who’s beautiful artwork still surrounds my home.
