Zena is an easy-going, light and fruity blonde ale. Notes of sweet tangerines, lemon zest, brambles, red berries and pear. Freshly baked bread smells and a decent, grassy bitterness.
Extra pale Maris Otter malt is bulked up by Scottish oats, Cara and dextrin malts. Saphir hops were added to the mash for delicate orange citrus flavours. Then, a go-to Dookit Brewing hop combination of Endeavour and Pilgrim was added in the kettle providing a British fruit basket of flavours.
Dookit say “Named after my grandmother Zena, who’s kindness after passing during the pandemic meant I could realise my dream of opening a brewery. Artwork by my other Grandmother Katie, who sadly I never got to know properly, but whose beautiful artwork still surrounds my home.”

An easy-going, light and fruity blonde ale. Notes of sweet tangerines, lemon zest, brambles, red berries and pear. Freshly baked bread smells and a decent, grassy bitterness. Extra pale Maris Otter malt is bulked up by Scottish oats, Cara and dextrin malts. Saphir hops were added to the mash for delicate orange citrus flavours. Co-fermented with K-97 and Windsor yeast for extra fruity and fresh bread esters. Those with keen memories may remember Zana, the Summer Ale which was Dookit’s first release from our Tollcross home. This recipe is close in nature to Zana: the lager grist and yeast has been replaced by a malt base and yeasts to make for the best session strength ale!
