Automne 2016 is a masterfully concentrated Ice Cider, aged for three years in barrels to develop a profound depth of character. It presents a luscious sensory profile defined by intense aromas of baked apple and wildflower honey, underpinned by subtle woody nuances from its long maturation. The palate is decadently sweet and liqueur-like, offering layers of caramelized stone fruit and rich honeycomb. Despite its significant 12% ABV and substantial residual sugar, a precise vein of acidity provides structural balance, leading into a lingering, warming finish of dried apricot and refined oak tannins.
Appearance. Deep amber to copper in color (SRM 15–22) with brilliant clarity and high viscosity, forming slow-moving legs on the glass. As a still cider, it lacks any foam or head retention.
Aroma. High intensity aroma dominated by concentrated baked apple, wildflower honey, and dried apricots. The three-year barrel aging contributes subtle notes of vanilla and seasoned oak, without any distracting fermentation byproducts or sulfur.
Taste. Intense initial sweetness with a syrupy, liqueur-like character featuring rich cooked apple and honeycomb. The significant residual sugar is balanced by high acidity, preventing a cloying finish. Complexity is enhanced by light oak tannins and a clean, warming aftertaste of caramelized fruit.
Mouthfeel. Full, viscous body with a heavy, syrupy texture. Carbonation is low to still. A significant and pleasant alcohol warmth is present, though the mouthfeel remains smooth and devoid of harsh astringency.
