This collaboration reimagines the Baltic Porter through the lens of 100% Brettanomyces fermentation. It presents a deep, complex profile where the traditional rich maltiness of dark chocolate and dark roast meets an unusual array of red fruits and rustic spices. The fermentation adds a layer of leathery funk and dried cherry that weaves through the molasses and licorice notes common to the style. While staying true to its smooth, warming core, the yeast introduces a dry, wild character that elevates the fruit-driven esters. It is a bold, unconventional take that balances deceptive strength with a lingering, multifaceted finish.
Appearance. Opaque dark brown with deep reddish-copper highlights (SRM 25-30); thick, persistent tan-colored head with fine lacing.
Aroma. High intensity with a rich malt profile of dark chocolate, molasses, and deep toast; complex esters of plums, cherries, and red currants are joined by a distinctive Brettanomyces character of leather and peppery spice; smooth alcohol presence; no hop aroma.
Taste. Initial impression of sweet dark chocolate and licorice; complex dark fruit flavors of raisins and cherries; mid-palate reveals roasted coffee and a rustic, spicy fermentation character; moderate bitterness provides balance; finish is drier than typical for the style, leaving a lingering hint of dark roast, dried fruit, and earthy funk.
Mouthfeel. Medium-full body with a smooth, velvety texture; moderate-high carbonation makes it mouth-filling; noticeable but well-integrated alcohol warmth; very low astringency despite the roasted character.

Marbendill is het resultaat van een erg leuke dag in de brouwerij met Stulli en Hylgur van Borg Brugghús in IJsland. Zoals bij al onze samenwerkingen is het recept een beetje vreemd. Deze keer namen de brouwers een Baltische porter-geïnspireerde basis, maar fermenteerden deze 100% met Brettanomyces-gist. Het resultaat is een interessant bier met een complex palet van rode vruchten, chocolade, donker gebrand en kruiden. Raar, op een goede manier, net als de Marbendill zelf, het half-mens/half-zeehond wezen dat naar verluidt door de IJslandse wateren zwerft.
