This complex Brett Beer displays the sophisticated results of spontaneous fermentation and three years of oak maturation. The integration of Riesling grapes introduces elegant aromas of white peach, honeysuckle, and a distinct mineral petrol note. The extended barrel aging provides a structural backbone of dry wood tannins that complements the intricate house funk of wet hay and aged leather. Effervescent carbonation accentuates a bright, vinous acidity, leading into a bone-dry finish where notes of apricot and lemon zest linger. It is a masterful expression of time and fruit, balancing wild earthy depth with floral refinement.
Appearance. Deep gold to pale amber (6-9 SRM). Pours with a fine-beaded white head that recedes to a persistent collar; slight haze present from the spontaneous fermentation and grape proteins.
Aroma. High intensity with a complex bouquet of floral Riesling (honeysuckle, jasmine), stone fruit (peach, apricot), and a distinct mineral character. The Brettanomyces provides a deep, aged funk consisting of barnyard, leather, and wet hay, backed by a subtle vanillin and toasted oak presence.
Taste. Initial impression is sharply dry and vinous. Flavors of green apple, tart white grape, and lemon zest dominate the mid-palate, supported by a low, cracker-like malt base. Significant earthy funk and hay-like complexity from the three-year aging process. Hop bitterness is very low, but the profile is balanced by a firm lactic acidity and oak tannins. The finish is bone-dry and lingering with a fruit-skin astringency.
Mouthfeel. Medium-light body with high, effervescent carbonation that creates a prickly, champagne-like sensation. Moderate alcohol warmth is well-integrated. Notable tannin-driven astringency and a crisp, clean mouth-coating acidity.
