Dark Mero355 is a sophisticated Czech Dark Lager that balances deep malt complexity with a refined, clean fermentation profile. Layers of bread crust, toasted nuts, and subtle cola notes emerge from a base of Pilsner and dark caramel malts, while the addition of roasted malts introduces hints of bitter chocolate and sweetened coffee without becoming acrid. A delicate, spicy hop presence provides a necessary counterpoint to the malty-rich Maillard products and light residual sweetness. Smooth and moderately creamy on the palate, it finishes with a gentle, lingering bitterness and faint dark fruit esters that honor its traditional Bohemian heritage.
Appearance.Dark mahogany to nearly black with distinct garnet highlights (SRM 28-35). Displays brilliant clarity and is topped by a large, persistent, tan head with excellent lacing.
Aroma.Moderate to high intensity featuring rich, bready malt, toasted nuts, and dark caramel. Subtle notes of licorice and milk chocolate are present, alongside a low spicy hop character and very light plum-like esters.
Taste.Dominant complex maltiness with flavors of toasted bread, caramel, and cola. Low to moderate roasted malt flavors of cocoa and light coffee appear mid-palate. Low spicy hop flavor provides balance against a moderate bitterness (approx. 25 IBU). The finish is clean with a lingering malty sweetness and a touch of dried dark fruit.
