Una cervecería artesanal en la costa del Pacifico en Ensenada, BC con mucha visión de donde estamos y como debe de ser la cerveza. Nuestra meta es producir cerveza original elaborada a los estilos clásicos usando la mejor materia prima obtenible. Producimos siete estilos de cerveza las cuales creemos serán de su agrado.
Nuestro historial cervecero empezó después de una larga vendimia una tarde donde dijimos basta de vino queremos una cerveza y todas las cervezas que encontrábamos eran muy tímidas y bien conocidas. Queríamos algo diferente, con mas carácter. La cocina de la casa fue donde iniciamos y fue terreno de muchas pruebas y un gran aprendizaje. Hasta que un buen día un filtro exploto dejando cubierto piso, paredes, techo, todo de cerveza. Esto precipito nuestra mudanza a una nueva localidad, la adquisición de un socio y nuestro crecimiento inicial a producir mas cerveza. El nuevo socio sugirió que usáramos una enfermería que no estaba en uso en el astillero que el administraba. Y es allí donde empezamos nuestro viaje de exploración, degustación, y venta (no siempre cobranza). Durante este tiempo tuvimos visitas de mucha gente con paladares y conocimientos excepcionales, Somos muy afortunados en que tenemos buenos amigos que no les dio pena darnos sugerencias. Y en verdad esto fue muy valioso.El dueño de un restaurante nos pidió si le podíamos poner la cerveza de planta en su local y el venderla, y así fue como comenzamos. Llegamos al punto donde necesitábamos crecer para poder aumentar nuestra producción. Se legalizo la empresa, se mudo a el sauzal y colocamos el nuevo sistema de la cervecería dentro de unos contenedores reciclados. En este lugar logramos darle uso a nuestra agua de salida y re-usar nuestra malta en hortalizas, parte de nuestro programa de reciclaje.
