Agua Mala Garibaldi is a refined Witbier crafted in collaboration with Chef Drew Deckman, designed specifically for the culinary stage. This elegant ale features a base of unmalted wheat and barley, providing a soft, bready foundation with whispers of honey. The addition of seasonal organic ingredients from the Mogor orchard imparts a distinctive, garden-fresh complexity that complements the traditional notes of zesty orange peel and peppery coriander. A vibrant carbonation lifts delicate herbal and floral aromas, leading to a crisp, refreshing finish. It is a harmonious marriage of rustic Belgian tradition and the vibrant terroir of Valle de Guadalupe.
Appearance.Very pale straw to deep yellow (2–4 SRM). Characteristically cloudy with a milky, whitish-yellow shine from starch haze and yeast. Features a dense, white, moussy head with good retention.
Aroma.Moderate bready maltiness with light notes of honey and vanilla. High intensity of zesty, citrusy-orange fruitiness and perfumy-lemony coriander. Seasonal organic ingredients from the orchard contribute subtle herbal, spicy, and earthy aromatics that blend with the fruity Belgian yeast esters.
Taste.Initial bready, grainy malt flavor followed by moderate zesty orange fruitiness. Herbal-spicy flavors, including subtle coriander and seasonal orchard accents, are complex but balanced. Hop flavor is very low to none, with a low bitterness that supports a refreshingly crisp and dry finish without harshness.
Mouthfeel.Medium-light body with a notable smoothness and light creaminess. High carbonation provides a lively, effervescent character. Highly refreshing with no perceived alcohol warmth or astringency.
