This Imperial Stout delivers an imposing sensory experience defined by its complex grist of four malts and the addition of Sonoran piloncillo. The profile is anchored by intense dark chocolate and freshly roasted coffee notes, which provide a robust, bittersweet foundation. The piloncillo adds a layer of earthy sweetness and subtle dark fruit character, such as prune or raisin, that melds into the roast. With a medium bitterness for structural balance, the beer moves through a velvety, full-bodied palate into a warming finish. It is a harmonious and deep beer where the unrefined sugar sharpens the dark malt complexity.
Appearance. Jet black and opaque (40 SRM). Features a thick, long-lasting, deep tan to dark brown head with significant lacing and visible legs due to high viscosity.
Aroma. High intensity with dominant scents of espresso, bittersweet cocoa, and charred grain. Underlying notes of molasses and dark dried fruits like plum or fig are present, alongside a clean, smooth alcohol presence. Hop aroma is very low and slightly earthy.
Taste. Rich and complex initial impression of dark chocolate and roasted coffee beans. The piloncillo provides a mid-palate depth of burnt sugar and dark fruit. Bitterness is moderate, providing enough balance to prevent cloying sweetness. The finish is lingering and bittersweet with a pleasant, roasted aftertaste and no harshness.
Mouthfeel. Full-bodied and chewy with a velvety, luscious texture. Carbonation is moderate. A smooth, gentle alcohol warmth is noticeable and well-integrated. Low astringency.
