Bready wheat and barley malt provide a soft, grainy foundation that balances the herbal intensity. Refreshingly dry and medium-light in body, it finishes with a clean, effervescent snap, swapping traditional Belgian yeast esters for a pristine lager-like fermentation that allows the aromatic spices to remain front and center.
Appearance. Very pale straw to light gold (3 SRM). Naturally cloudy with a distinct milky haze from the unfiltered wheat and yeast. Topped with a thick, moussy white head that shows good persistence and light lacing.
Aroma. Moderate to high intensity aromatic profile. Prominent resinous and piney juniper notes dominate, complemented by a complex herbal and peppery spice blend. Gentle bready and grainy wheat malt sweetness supports the spice. Low citrus-orange notes are present, though the clean fermentation profile lacks the typical fruity esters found in top-fermented ales.
Taste. Initial impression is crisp and herbal. Juniper provides a refreshing, slightly woody spice that mingles with notes of wild Mediterranean herbs. Grainy, bready malt flavors emerge mid-palate, offering a hint of honey-like sweetness. Hop bitterness is low, providing just enough structure to support the botanicals. The finish is notably dry, clean, and refreshing with a lingering herbal aftertaste.
Mouthfeel. Medium-light body with a smooth, slightly creamy texture from the wheat content. Carbonation is high and effervescent, enhancing the beer's refreshing quality. No alcohol warmth is perceived, and there is no astringency from the herbs or spices.

La Colomba es una cerveza blanca que produce la cervecera Pietra de Córcega. Elaborada con malta de cebada y trigo candeal, esta cerveza se aromatiza además con lúpulo y con una mezcla de hierbas de los montes bajos de Córcega: enebro, mirto y madroño. Esta Columba presenta en vaso un color rubio de espuma abundante, que libera efluvios afrutados y ligeramente ácidos, olores especiados y notas que recuerdan la presencia del trigo. En boca, se aprecian sabores afrutados con un aspecto ácido que recuerda al limón. Estos sabores se acompañan de otros herbáceos y especiados más intensos que recuerdan la presencia del monte bajo. La presencia del trigo harinero (trigo tierno) le da un cuerpo untuoso a esta cerveza, pero sin llegar a ocultar la ligera acidez final.
