This French Cider presents a sophisticated sensory profile born from its long fermentation and extended lees aging. It opens with an expressive bouquet of ripe, bruised apples and subtle floral esters, underpinned by an earthy, slightly spicy phenolic complexity typical of traditional methods. On the palate, the character of late-harvest bittersweet apples shines through, offering a harmonious balance of natural sweetness and firm tannic structure. The traditional manual disgorgement ensures a clear, sparkling presentation, while the extended contact with yeast lees contributes a creamy texture and significant depth to the lingering, fruit-forward finish.
Appearance. Brilliant, deep gold to light amber. Persistent, fine-beaded white mousse with excellent clarity and moderate lacing resulting from traditional disgorgement.
Aroma. Moderate to high intensity of rich, ripe apple and bittersweet apple skin. Secondary notes of spice, dried hay, and a light buttery character from lees aging. Clean fermentation with a hint of earthy funk and floral honey.
