In 1948 he introduced the Spéciale Noël Christmas beer, the predecessor of the current Chimay Bleue (1956). He also brewed the Chimay Triple, albeit on a small scale. This beer was so well received that, in 1966, the monks decided to start marketing it.
Nowadays, Trappist abbeys do not confine themselves to just brewing a classic Dubbel and Tripel. There are often lighter versions, called ‘Enkel’ (‘only’ or ‘exclusive’) which are brewed for consumption within the abbey walls. These are the so-called ‘refectory beers’ drank by the monks themselves.
When the Auberge de Poteaupré, an abbey tavern and visitors’ centre, opened its doors in the 1970s, the Dorée on tap quickly became the house beer. This youngest member of the Chimay clan entered the market in quite a modest way.
On the occasion of the launch of the Chimay Dorée cheese, the monks gave permission to the brewery to market the Chimay Dorée beer more widely. The Chimay Dorée cheese is now offered as a seasonal product.
In common with all the Chimay beers, this top-fermented beer re-ferments both in the bottle as in the barrel. The Chimay Dorée proves that even a light beer can be surprisingly complex. In common with many white beers, coriander and curaçao are responsible for the taste.

De smaak begint fris en fruitig, met een herkenbare moutsmaak die vervolgens overgaat in het kruidige karakter van koriander. Het bier heeft een rijke koolzuurverzadiging, die zorgt voor een verfrissende prikkeling op de tong en het gehemelte. In de afdronk is er een lekker bittertje met een kruidige nasmaak.
Door het lage alcoholpercentage is dit bier wat dunner, wat het makkelijk te drinken maakt. Chimay è un birrificio trappista con sede nell’omonima località della Vallonia, dove sorge l’Abbazia di Notre-Dame de Scourmont, edificata nel 1850 da alcuni monaci dell’Abbazia di Westvleteren, guidati dall’abate Jordain.
Le birre di Chimay sono stata tre la prime ad avere ricevuto il marchio ATP come Authentic Trappist Product e il birrificio è diventato uno dei due produttori trappisti più grandi del Belgio e nel mondo. Il monastero si impegna nella produzione di formaggi e di birre che garantiscono la sussistenza dei monaci, che interrompono la produzione in concomitanza con le due guerre del novecento.
Il secondo dopo guerra coincide con l’introduzione di nuove tecniche, l’ampliamento dell’impianto e l’isolamento del famoso lievito di Chimay, che caratterizza le cinque leggendarie birre prodotte dal birrificio trappista. Chimay rimane tuttora il marchio trappista più famoso e diffuso nel mondo.

Chimay vàng là loại bia khá đặc biệt của Chimay cực kỳ hiếm, trước đây loại bia này chỉ dành cho các thầy tu ở tu viện của Chimay sử dụng, không bán ra ngoài với mục đích thương mại. Hiện nay, rất ít nơi phân phối sản phẩm này, trong số ít đó có Mê Beer.
Thành phần của bia được biết đến chủ yếu, như: nước, lúa mạch – mạch nha, đường, hoa bia, men bia, vỏ cam đắng và rau mùi tạo nên hương vị riêng mà chỉ Chimay Vàng mới có.
Bia có màu vàng óng ả trong suốt, được bao phủ bởi lớp bọt bia trắng mờ. Vị bia nhẹ nhàng và tinh tế, với hương hoa và một chút mạch nha hun khói và một chút đắng. Hương vị bia được tạo ra bởi hoa bia, một chút chanh (cam quýt) và rau mùi.
Thưởng thức bia nên để lạnh ở nhiệt độ 9 -12°C, kèm theo cốc bia đã được làm lạnh, không nên sử dụng thêm đá để cảm nhận trọn vẹn hương vị của bia. Bia thích hợp khi ăn cùng với thịt nướng, pate gan ngỗng và pho mát. Xem thêm các dòng sản phẩm của Bia Chimay:
