Chien Bleu S(c)herry is a complex Wild Specialty Beer born from a meticulous blend. It marries the vibrant, dark fruit profile of a black cherry-infused Saison with the depth of a rustic Saison aged eighteen months in Sherry barrels. The result is a sensory tapestry of funky Brettanomyces, deep stone fruit, and nuanced oxidative notes. Aromas of tart cherries and almond-like pits lead into a palate where vibrant acidity meets dry, vinous oak and nutty Sherry characteristics. This medium-bodied ale concludes with a lingering, tannic dryness and a whisper of wild farmhouse soul.
Appearance. Deep garnet with hazy ruby highlights (SRM 18-22). Features a thin, persistent pinkish-tan head with moderate lacing.
Aroma. High intensity featuring tart black cherries, leather, and barnyard funk. Significant vinous character from the Sherry barrels adds notes of toasted almond and dried fruit, with a spicy yeast backbone.
Taste. Initial tartness of sour cherry and dark stone fruit. The mid-palate is bone-dry with moderate lactic acidity, balanced by nutty Sherry oxidation and woody oak tannins. Hop bitterness is low, finishing very dry and clean with a lingering vinous aftertaste.
Mouthfeel. Medium-light body with high, prickly carbonation. Notable tannin from the cherry skins and barrel aging provides a slight, pleasant astringency and enhances the dry finish.
