This Pastry Fruited Gose presents a bold sensory fusion of orchard fruit and confectionery sweetness. Ripe pear dominates the initial impression, supported by a rich thread of salted caramel that adds depth and a smooth, savory edge. Beneath the adjuncts, a base of Pilsner and Wheat malts provides a soft, doughy foundation. The profile is punctuated by a distinct funky yeast character that balances the richer elements, while the classic Gose acidity and sea salt provide a sharp, citric counterpoint. Despite the elevated alcohol content, the finish remains surprisingly drinkable, marrying sweet, sour, and saline notes in a complex, medium-full-bodied experience.
Appearance. Deep gold to amber-yellow (6–8 SRM). Persistent, creamy white head with moderate lacing. Distinctive haze from wheat and pear additions, appearing nearly opaque.
Aroma. High intensity. Bold aromas of fresh pear and buttery caramel are layered over a tangy lactic acidity. Subtle funky fermentation notes—hints of hay or earthy yeast—mingle with a light sea salt breeze. Very low bready malt character and a touch of citrusy coriander.
Taste. Complex initial impression of sweet pear nectar and rich salted caramel. This is quickly met by a moderate lactic sourness that provides a bright, citric snap. The middle palate reveals doughy wheat malt and a hint of funkiness. Bitterness is nearly absent, allowing the salt to accentuate the fruit and caramel. The finish is a multifaceted blend of lingering sweetness and mouthwatering acidity.
Mouthfeel. Medium-full body, more viscous than a traditional example due to caramel and 7.7% ABV. High carbonation creates an effervescent, tingly sensation. Noticeable alcohol warmth is present. Salt provides a round, mouthwatering quality.
