This English Barley Wine offers a luxurious sensory experience, defined by a base of Simpson's Malt that provides deep bready and biscuit notes. Aged in Highland Park Scotch whiskey barrels that previously held Spanish sherry, the beer exudes a complex profile of rich toffee and concentrated dried fruits like fig and date. The barrel influence introduces a subtle heather-like peat and vinous character that integrates seamlessly with the malt. At 14.5% ABV, it presents a significant but smooth warmth that balances the dense, chewy texture. Every sip reveals layers of marmalade-like hop character and oak-driven tannins, making it a profound example of barrel-matured malt complexity.
Appearance. Deep mahogany to dark amber with brilliant clarity and noticeable ruby highlights. It displays a low, off-white head with poor retention, common for the style and strength, leaving thick, viscous legs on the glass.
Aroma. High intensity with complex aromas of rich toffee, toasted bread, and biscuit from the Simpson's Malt. Pronounced notes of dried fig and date are complemented by Highland Park whiskey-derived heather and a vinous, sherry-like oxidation. Hops are low, showing subtle earthy and floral nuances.
Taste. Massively malty and multi-layered, featuring initial impressions of sweet toffee and biscuit. Middle palate delivers intense dark fruit flavors of fig and date, supported by oak-derived tannins and a mild Scotch whiskey character. Hop bitterness is moderate, providing enough balance against the sweetness with an earthy, marmalade-like finish. The aftertaste is long and warming with lingering notes of vinous fruit.

This Barleywine was skillfully crafted with almost 90% Scottish malted barley from Simpson’s Malt, which is also one of the malts that Highland Park incorporates in their whiskey. During aging in the oak, which formerly held Spanish sherry before Highland Park, the beer develops intensely rich attributes resembling toffee and dried fig and date.

The peat smoke of the scotch imbues Simmer Dim with the most intriguing campfire background that plays nicely with some boozy heat.
