Brilliant ruby red with a delicate pink froth, it opens with an intense bouquet of jammy raspberries, earthy funk, and a touch of vanilla-kissed oak. On the palate, a bright, lactic acidity accentuates the juicy fruit profile, balanced by a bone-dry, effervescent finish. Subtle spicy phenolics and light tannins from the oak barrels provide a structured, complex mouthfeel, making this Saison a refreshingly tart, deeply layered, and beautifully expressive showcase of fruit and barrel fermentation.
Appearance.Hazy, glowing ruby-red to deep pinkish-orange with a long-lasting, dense, pale-pink head that leaves delicate, persistent lacing. Unfiltered and effervescent.
Aroma.High intensity. Prominent jammy, fresh red raspberry aroma blends with complex wild yeast notes of cracked black pepper, rustic barnyard funk, and lemon peel. Low oak-derived vanillin, light coconut, and subtle toasted wood notes are present, with a very low, grainy wheat malt background.
Taste.An initial burst of tart, juicy raspberries is followed by complex rustic farmhouse esters and low spicy phenolics. Malt flavor is very low, showing just a hint of raw wheat. Hop bitterness is very low, as the balance is driven by a clean, lactic acidity and light wood tannins. Extremely high attenuation leads to a bone-dry, crisp finish with a lingering aftertaste of tart raspberry skins and dry oak.
Mouthfeel.Light to medium-light body with very high, spritzy carbonation. No perceived alcohol warmth. Features a clean, puckering acidity and a light, drying oak-tannin astringency that leaves the palate refreshed.
