This gorgeous crimson-hued beer is a collaboration between Cantillon and natural wine legends Cantina Giardino. Here, a three-year-old lambic is macerated on Aglianico for three months in chestnut barrels, before a young lambic is added to create a second fermentation in bottle. Remarkably refreshing but full of intrigue, with a wonderful balance between sour wild berries, bitter herbs, and earthiness.
The Beer will evolve over time.

The Story Behind Drogone
The name Drogone is a tribute to Alessio “Drogone” Selvaggio, an Italian beer lover and advocate for traditional lambics. He was a key figure in promoting natural fermentation and played an important role in bringing Belgian lambics to the attention of beer enthusiasts across Italy. In his honor, Brasserie Cantillon created this distinctive blend, celebrating the rich heritage of spontaneous fermentation while experimenting with new and exciting flavor profiles.
Brewing and Fermentation
As with all Cantillon beers, Drogone is brewed using time-honored lambic techniques. The base is a traditional spontaneously fermented lambic, brewed with a mixture of malted barley and wheat, aged hops, and the naturally occurring wild yeasts and bacteria from the Brussels air. These microorganisms initiate fermentation in the brewery’s iconic open-cooling koelschip, giving Cantillon lambics their signature depth and complexity.
Once fermentation is underway, the lambic is transferred into wooden barrels, where it matures for several years. Drogone is crafted from a carefully selected blend of these aged lambics, chosen by the brewer to achieve a unique balance of acidity, funk, and wild character.
