This West Coast style Double IPA showcases a robust interplay between its sturdy English Pale malt foundation and a classic American hop profile. The aroma is dominated by the resinous and piney depths of Columbus and Simcoe, accented by the sharp citrus spray of Citra. On the palate, a firm bitterness asserts itself quickly, yet it remains balanced by a subtle, grainy malt sweetness. The high alcohol content provides a gentle, integrated warmth that carries the pungent hop oils through a crisp, dry finish. It is a bold, intensely hoppy experience that prioritizes clarity and a clean fermentation profile.
Appearance. Deep gold to light copper; brilliant clarity; moderate-sized, persistent off-white head with fine lacing.
Aroma. High intensity hop aroma featuring pungent resin, damp pine, and grapefruit zest. Low, clean, bready malt background. Neutral fermentation character with a very subtle hint of clean alcohol.
Taste. Initial hit of resinous pine and citrus peel followed by a supportive, soft, grainy malt flavor. Bitterness is high and assertive but lacks harshness. Finishes very dry with a lingering hoppy aftertaste of grapefruit and spice.
Mouthfeel. Medium body with a smooth, oily texture from hop resins. Moderate carbonation. Noticeable but smooth alcohol warmth. Minimal astringency.
