This sophisticated Belgian Tripel represents a masterful marriage of monastic tradition and French viticulture, having spent 24 months maturing in Graves Bordeaux wine barrels. The sensory profile leads with classic peppery phenols and citrus esters, now elegantly interwoven with refined notes of white grapes, toasted oak, and a subtle tannic structure. On the palate, the soft, grainy-sweet Pilsner malt foundation supports complex layers of stone fruit and a distinct vinous character derived from the wine-soaked wood. The finish is remarkably dry and effervescent, expertly masking its 8.8% ABV behind a firm bitterness and a lingering, woody complexity.

Appearance. Deep yellow to pale amber (5–7 SRM). Large, creamy, rocky white head with excellent persistence and characteristic Belgian lacing. Brilliant clarity despite the extended barrel aging.

Aroma. High intensity bouquet featuring complex peppery and clove-like phenols alongside fruity esters of lemon zest and orange. Notable vinous influence provides scents of white wine and toasted oak. A light, honey-like Pilsner malt sweetness provides the base, with low spicy hop notes in the background.

Taste. Initial impression is bright and spicy. Medium-high bitterness is accentuated by a very dry, vinous finish. Flavors of peppery yeast, orange peel, and apricot are complemented by the Graves barrel’s influence, contributing dry white wine notes and a touch of oak tannin. Malt character remains soft and grainy-sweet without being heavy.

Mouthfeel. Medium-light body that feels deceptively airy for the gravity. High carbonation creates a lively, effervescent sensation. Noticeable but well-integrated alcohol warmth provides a pleasant glow without harshness. Subtle oak tannins add a light, drying astringency.
