This sophisticated, barrel-aged Saison reveals the transformative power of twenty-four months in Chenin oak. It pours with an effervescent elegance, releasing an aromatic bouquet of crisp white grape, honeyed floral notes, and a distinct peppery spice characteristic of the style. The palate is defined by its remarkable dryness and vinous complexity, where layers of woody tannins meet a soft, grainy malt backbone. Substantial at 8% ABV, it maintains a refreshing quality through high attenuation, finishing with a lingering, bone-dry character and subtle oak-derived nuances that echo the character of a fine white wine.
Appearance. Deep gold to light amber (7–9 SRM) with a dense, rocky ivory head showing excellent persistence and Belgian lace. Unfiltered with a slight haze and lively, effervescent carbonation.
Aroma. High intensity with prominent fruity esters of pear and lemon zest blended with spicy black pepper phenolics. A significant vinous character from the Chenin oak offers scents of white grape and honey over a low, grainy malt base.
Taste. Initial impressions of tart white grape and floral honey transition into a moderate spicy bitterness and peppery fermentation character. The long wood aging contributes dry tannins and a wine-like acidity. Finishes bone-dry and crisp with a lingering, woody aftertaste.
Mouthfeel. Medium body with very high carbonation that feels prickly and effervescent on the tongue. A noticeable, well-integrated alcohol warmth is present, accompanied by a slight tannin-driven astringency.
