Burning Sky Monolith is a complex, dark interpretation of a Straight Sour Beer, defined by its eight-month maturation in a Chianti foudre. The visual presence is deep and imposing, matched by an aromatic profile rich with farmhouse funk and wild yeast character. Layers of dark chocolate and roasted grain emerge on the palate, harmonizing with a vinous oak depth and a bright, lemony lactic acidity. The influence of the Italian red wine barrels provides a sophisticated tannic structure, while the finish remains clean and dry, balancing the bold 8% ABV with a refreshing tartness that belies its dark color.

Appearance. Deep ebony to black (38-40 SRM). Maintains a moderate, creamy tan-colored head with fair retention. Clarity is generally clear when held to light, though appearing opaque in the glass.

Aroma. High intensity with a dominant lactic sourness and distinct farmhouse funk from wild yeast. Secondary notes of dark chocolate, toasted bread, and vinous red wine. Subtle oak vanillins and tart red berries are present. No hop aroma.

Taste. Initial impression is a sharp yet controlled lactic acidity. Mid-palate reveals layers of dark chocolate, cocoa, and crusty brown bread. The Chianti foudre contributes significant vinous flavors and a dry, wood-aged character. Hop bitterness is undetectable. The finish is dry and lingering, with a clean acidity and a touch of dark fruit.

Mouthfeel. Medium-full body, providing more substance than typical examples due to the higher gravity and dark malts. Moderate carbonation provides a slight effervescence. A gentle, well-integrated alcohol warmth is present.
