Rodenbach Evolved St Georges presents an elegant expression of a Straight Sour Beer, defined by its extended two-year maturation in massive oak foeders. The sensory profile is led by a sharp, clean lactic acidity that evokes lemon zest and tart green apple. Beneath the bright acidity, a foundation of pale wheat malt provides a soft, biscuity character and a crackery dryness. The long foeder aging imparts subtle nuances of dried wood and a whisper of vanilla, rounding out the profile without the funk of Brettanomyces. It concludes with a crisp, effervescent finish that highlights its refined, vinous complexity and vibrant citrus notes.

Appearance. Pale straw to light gold (3 SRM); clear to slightly hazy from the wheat content. Features a dense white head that dissipates quickly, leaving minimal lacing, with high effervescence.

Aroma. High intensity of sharp lactic sourness, reminiscent of lemon peel and unripe apricot. The malt character is subtle, showing soft wheat and bready notes, while the two-year foeder aging contributes a faint, woody dryness. No hop aroma is present.

Taste. Dominated by a clean, piercing lactic acidity and tart apple flavors.
