Tonka beans impart distinct, layered aromas of sweet almond and aromatic vanilla, which serve to soften the assertive roast character typical of the style. Appearance. Jet black and opaque (SRM 40). Topped by a large, persistent light brown head with dense foam and excellent lacing.
Aroma. High intensity with a dominant roasted malt character of dark chocolate and espresso. Spicy gingerbread notes are prominent, complemented by the marzipan-like sweetness of tonka bean and rich vanilla. Low resinous hop aroma and moderate dark fruit esters are present alongside a noticeable, clean alcohol warmth.
Taste. Rich initial impression of bittersweet chocolate and toasted caramel. Mid-palate introduces complex gingerbread spice and nutty almond notes from the tonka bean. Bitterness is medium-high but balanced by the significant malt body and residual sweetness. The finish is long, warming, and clean with lingering cocoa and spice.
Mouthfeel. Full-bodied and exceptionally creamy with a velvety texture. Carbonation is moderate. Significant alcohol warmth is present but smooth and well-integrated, with no roast-derived astringency.
