28/06/2022 | Para este Strenge Winter, elaboramos un mosto completamente de malta con la adición de azúcar candi en el coolship. Este mosto se elaboró el 16 de abril de 2020. Lo dejamos envejecer más de dos años en tres barriles diferentes. Al embotellar, mezclamos con algo de lambik joven para continuar la fermentación en botella, así como una pequeña parte de mosto reducido de una cerveza Nocturne. La edad promedio ponderada de la mezcla al momento de embotellar fue, por lo tanto, de más de 23 meses.
