Deze fruitlambiek wordt vervolgens opnieuw gemengd met meer lambiek om een minimale intensiteit van 35% fruit te verkrijgen. Hommage is een body lambiekbier met body, met een intens diep rood bosfruitboeket. Deze ongefilterde en ongepasteuriseerde lambiek is volledig natuurlijk zonder kunstmatige sappen, siropen of suikers toegevoegd.

Dieser besondere Bierstil kommt aus ihrer Heimat in Brüssels Südwesten und erfordert einiges an Geschick und Erfahrung. Weil mit wilden Hefen und Mirkoorganismen aus der Luft gearbeitet wird, ist der Fermentation unberechenbarer als mit konventioneller Hefe. Außerdem darf das Bier nur dann den Namen Lambik (manchmal auch Lambic geschrieben) tragen, wenn es tatsächlich im Pajottenland produziert wird.

Das Oude Lambik 2017 ist ein feiner Tropfen, der vor seiner Abfüllung in Flaschen sechs Jahre lang in Eichenfässern reifte. Für maximale Geschmackstiefe und Intensität, wird jedoch nicht nur ein Sud im Fass gelagert, sondern drei verschiedene. Das Trio wurde in drei Brauvorgängen nacheinander hergestellt und dann im gleichen Fass gereift, bevor es abgefüllt und in der Flasche weiter gelagert wurde. Dank seiner stattlichen 6,9 % Alkoholgehalt kann das edle Gebräu fast beliebig lange gelagert werden und gewinnt mehr und mehr an Charakter und Aroma.

Um dem Oude Lambik 2017 seine volle Bandbreite zu entlocken, sollte man es nicht zu kalt genießen: Die Wärme verleiht der Komposition aus fruchtiger Säure, holzigen Anklängen und feiner Würze eine zarte Süße, die Bitterkeit und Säure elegant ausgleicht.
