Brooklyn Black Ops is a sophisticated Imperial Stout that marries the intensity of dark roasted grains with the refinement of Champagne yeast refermentation. Aging for four months in Four Roses small batch bourbon barrels imparts deep layers of cocoa nibs, toasted vanilla, and structured oak. On the palate, the high ABV is well-integrated, presenting a warming but smooth character. The unique re-fermentation process results in a drier, more vinous finish than traditional versions, cutting through the decadence of espresso and dark chocolate notes. It is a harmonious, complex masterpiece where charred wood and dark fruit esters create a lingering, luxurious sensory profile.

Appearance. Opaque and jet black (40+ SRM) with a thick, persistent deep tan head and excellent lacing. High viscosity is evident by the prominent legs forming on the glass.

Aroma. High intensity with a rich blend of roasted malt notes including espresso and bittersweet chocolate. Layered with Four Roses bourbon accents of vanilla, coconut, and spicy oak. Low dark fruit esters of prune and fig are present alongside a clean, vinous alcohol character.

Taste. Initial flavors of rich cocoa nibs and charred grain lead to a complex mid-palate of caramel, spicy bourbon, and toasted oak tannins. Firm hop bitterness is present but balanced by the immense malt depth. The finish is remarkably dry and clean for the style, with a lingering warmth and a subtle hint of black licorice.

Mouthfeel. Full-bodied and chewy with a velvety, luscious texture. Carbonation is moderate to high and fine-beaded due to the Champagne yeast refermentation. A smooth, gentle alcohol warmth is noticeable but not solventy.
