BrewDog’s 5AM Saint is a complex American Amber Ale that strikes a precarious balance between a robust malt bill and vibrant New World hops. The foundation is built on Maris Otter and Munich malt, delivering layers of biscuit, toast, and a hint of dark chocolate. This malt depth is met by a heavy dry-hop regimen featuring Nelson Sauvin, Simcoe, and Amarillo, which infuse the profile with distinctive sensory cues of lychee, orange marmalade, and dark berries. Cascade, Centennial, and Ahtanum add a classic citrus and spicy sizzle. It pours a reddish-amber with an off-white head, offering a sensory experience that is simultaneously malty, hoppy, and impressively structured.
Appearance. Deep reddish-amber to coppery-brown; moderately large off-white head with good retention and lacing; generally clear.
Aroma. High intensity hop aroma featuring tropical lychee, citrusy marmalade, and stone fruit; moderate maltiness with prominent caramel, biscuit, and light toasted chocolate notes; low fruity esters.
Taste. Initial malty sweetness with caramel and toasted biscuit flavors; moderate to high hop flavor reflecting citrus, peach, and berry; moderate bitterness that balances the sweet malt; finishes moderately dry with lingering hop resin and caramel.
