This Straight Sour Beer highlights a sophisticated interplay between sharp lactic acidity and the delicate, honeyed perfume of fresh elderflowers. Fermented with indigenous cultures and conditioned for six months in oak barrels, the sensory profile opens with high-intensity aromas of lychee, white grape, and tart lemon. The palate is defined by a clean, crisp acidity that cuts through a light, biscuity malt backbone. The elderflower maceration adds a floral elegance that lingers into an exceptionally dry finish, while the oak maturation provides a subtle structural tannin without overpowering the beer’s bright, refreshing character.
Appearance. Very pale straw to yellow (2–3 SRM). Clarity ranges from clear to a slight indigenous yeast haze. Large, white, frothy head with poor retention and minimal lacing; highly effervescent.
Aroma. High intensity. Dominant sharp lactic sourness with notes of lemon and tart green apple. Pronounced floral character from the elderflowers, reminiscent of muscat grapes and lychee. Low biscuity and crackery malt support. No hop aroma. Subtle, clean woody notes from oak maturation.
Taste. Initial impression is a brisk, clean lactic acidity. Strong floral elderflower flavor dominates the mid-palate with secondary notes of citrus. Minimal grainy and biscuity malt presence. Hop bitterness is undetectable with no hop flavor. Finish is very dry and crisp with a lingering tartness and floral aftertaste.
Mouthfeel. Light body. High carbonation with a prickly, effervescent sensation. Crisp acidity provides a sharp bite. Very low astringency from oak tannins; no perceptible alcohol warmth.
