Brasserie Flore Nintai presents as a sophisticated, rustic Saison that marries traditional farmhouse character with complex barrel and botanical nuances. The aroma is led by the unmistakable barnyard and stone fruit funk of Brettanomyces, layered with the delicate, grassy, and slightly marine perfume of Sancha green tea. On the palate, this pale ale is exceptionally dry, showing a crisp interplay between spicy yeast phenols and the herbal, tannic structure of the tea. Barrel aging adds a whisper of wood-driven depth, while the effervescent carbonation lifts notes of lemon zest and white pepper through a clean, lingering finish.
Appearance. Pale gold with a slight hazy, unfiltered appearance. It features a long-lasting, dense, rocky white head that leaves significant Belgian lace on the glass. Highly effervescent.
Aroma. High intensity. A complex profile of Brettanomyces-driven funk, including leather and hay, blended with the distinct grassy and herbal notes of Sancha green tea. Moderate fruity esters of lemon and green apple are joined by spicy black pepper phenols.
Taste. Bone dry and highly attenuated. The palate opens with earthy funk and spicy yeast, followed immediately by the herbal and slightly savory flavor of green tea. Bitterness is moderate but perceived as higher due to tea tannins and oak character from barrel aging. The finish is crisp, clean, and peppery.
Mouthfeel. Medium-light body with very high carbonation that feels prickly and effervescent on the tongue. Includes a light, pleasant tannic astringency from the tea infusion and a refreshing finish with no alcohol warmth.
