Brasserie Flore Ensemble #1 : acknowledgment is a sophisticated expression of the Saison style, elevated by a complex wood-aging program. This rustic ale blends components from red Côtes du Rhône and white wine barrels, resulting in a deeply vinous and layered profile. Aromas of stone fruit and black pepper mingle with earthy, leathery rustic notes. On the palate, a vibrant acidity balances soft, grainy malt and nuanced red fruit esters. The extended maturation introduces subtle tannins and a bone-dry finish, while the effervescent carbonation accentuates the interplay between tartness and cellar-like complexity.
Appearance. Deep gold to burnished copper in color (8-12 SRM) with a slight haze from its unfiltered, rustic nature. It supports a dense, long-lasting ivory head that leaves persistent Belgian lace.
Aroma. High aromatic intensity featuring a prominent vinous character with notes of white grape and red berry. The fermentation profile provides a complex mix of fruity esters like apple and pear, alongside spicy phenols resembling black pepper. A background of rustic, grainy malt provides an earthy, cellar-like foundation.
Taste. Initial tart impression transitions into a complex balance of fruity and spicy yeast character. Malt flavors are low but present as soft, grainy notes. The barrel influence is evident through vinous fruitiness and light oak. Bitterness is moderate (in the 25-35 IBU range) but feels crisp due to high attenuation and acidity. The finish is bone-dry and slightly tannic, with a lingering rustic, spicy aftertaste.
Mouthfeel. Medium-light body with very high carbonation that feels effervescent. There is a faint, pleasant tannic astringency from the wood aging and a light acidic prickle. Alcohol warmth is very low and well-integrated.
