Viti Vini Vici #15 is a sophisticated Saison that bridges the gap between farmhouse brewing and viticulture. Macerated on Acadie Blanc grape skins after a year in foudres, it presents a complex profile of white wine elegance and rustic charm. The sensory experience is led by vibrant notes of white peach, gooseberry, and floral honey derived from the Acadie Blanc. These vinous traits meld with the classic peppery phenols and stone fruit esters of the yeast. The extended wood aging adds a subtle tannic structure and a hint of oak, leading to a bone-dry, effervescent finish that is both refreshing and intellectually engaging.
Appearance. Pale gold with a slight orange hue (SRM 6-8). The beer is hazy from skin contact and being unfiltered, topped by a dense, rocky white head that shows excellent persistence and leaves fine lacing. Highly effervescent with tiny, rising bubbles.
Aroma. High intensity. A complex bouquet of white wine grapes, specifically Acadie Blanc, offering scents of lemon zest, green apple, and a floral quality. The yeast provides a moderate spicy black pepper and pear ester background. A subtle, earthy oak character from the foudre aging is present, along with a faint, clean tartness.
Taste. Initial impression is bright and vinous, dominated by the Acadie Blanc character featuring notes of white peach and tart grapes. The malt flavor is low and grainy, quickly overtaken by moderate spicy yeast phenols. Bitterness is low, as the profile is balanced by a refreshing, moderate acidity. The finish is exceptionally dry, with a lingering aftertaste of citrus peel and rustic oak.
Mouthfeel. Light to medium-light body with very high carbonation that creates a prickly, effervescent sensation. A very slight tannic astringency from the grape skins provides structure. Minimal alcohol warmth is perceived at 6% ABV, integrated seamlessly into the crisp finish.
