This modern take on a Saison balances rustic farmhouse tradition with a bold, contemporary hop profile. Brasserie Dunham utilizes a global hop blend featuring Citra and Simcoe alongside Australian Sylva and Topaz to deliver a punchy sensory experience. The aroma is a vibrant collision of tropical grapefruit from Citra and Topaz, resinous pine from Simcoe, and herbal notes from Sylva, all layered over a foundation of peppery phenols and a developing barnyard funk from Brettanomyces. On the palate, a soft, grainy malt backbone is overtaken by firm bitterness and a bone-dry finish. Effervescent and complex, this beer transitions from bright fruit to earthy, wild complexity.

Appearance. Pours a hazy pale gold with a thick, rocky, and persistent ivory head that leaves dense Belgian lacing. High effervescence is visible through the slight dry-hop haze.

Aroma. High intensity. A complex aromatic mix of grapefruit, mango, and resinous pine from the hops, complemented by peppery yeast phenols. Distinctive Brettanomyces notes of wet hay and leather emerge as the beer warms, layered over a light, grainy malt base.

Taste. Initial impressions of citrus and tropical fruit are followed by a soft, grainy malt flavor. Fermentation character is dominant, featuring spicy pepper and a subtle, funky complexity from the Brettanomyces. Hop bitterness is firm and moderate-high, leading into a bone-dry, highly attenuated finish with a lingering spicy and resinous aftertaste.

Mouthfeel. Medium-light body with very high, prickly carbonation that provides a refreshing, effervescent mouthfeel. A light, well-integrated alcohol warmth is present, with no perceived astringency despite the heavy hopping.
