L'esprit Des Hautes Côtes is a masterfully nuanced Saison that bridges rustic farmhouse traditions with refined barrel aging. Aged in Michel Couvreur whisky barrels, this 5.5% ale presents a sophisticated sensory profile where characteristic Belgian esters of pear and lemon zest dance alongside cracked black pepper phenols. The barrel influence introduces delicate layers of toasted oak, vanilla, and a faint, elegant whisper of malt whisky without overwhelming the base beer’s delicate structure. High carbonation lifts the grainy malt palate, leading into a bone-dry, effervescent finish. The result is a complex, highly attenuated ale that balances earthy yeast character with the prestigious, spirituous depth of fine French-matured whisky.
Appearance. SRM 5-7; pale gold to light amber with a slight, characteristic haze from being unfiltered. Features a dense, long-lasting rocky white head that leaves persistent Belgian lacing. Highly effervescent with visible rising carbonation.
Aroma. Moderate to high intensity. A complex blend of fruity esters suggesting lemon peel and green apple, paired with spicy, peppery phenols. The barrel aging contributes distinct notes of toasted oak, vanilla, and a subtle floral spirituous character from the whisky. Low floral hop aroma and a faint, sweet grainy malt backbone.
Taste. Initial impression is very dry and refreshing. Grainy, rustic malt flavors are quickly overtaken by spicy yeast phenols and citrusy esters. The Michel Couvreur barrels impart a sophisticated oak tannin and a hint of caramel-like whisky richness in the mid-palate. Moderate bitterness is amplified by the high attenuation, leading to a crisp, peppery, and bone-dry finish with a lingering woody aftertaste.
Mouthfeel. Medium-light body with very high, prickly carbonation that provides an effervescent, lively mouthfeel. Despite the moderate ABV, the barrel aging lends a light, well-integrated alcohol warmth. No harshness or significant astringency.
