This 2018 vintage Grand Cru is a masterclass in barrel-aged complexity, transformed by two years of maturation in Sangiovese Chianti barrels. The sensory profile is defined by a sharp, vinous acidity and deep, evocative notes of red currants, dried cherries, and leather. The Sangiovese influence imparts firm oak tannins and a sophisticated red wine character that interplays elegantly with the base beer’s intense lactic sourness. At 11% ABV, it presents a significant but well-integrated alcohol warmth. The long maturation yields a bone-dry, effervescent finish, making this Straight Sour Beer an intense, cellar-aged experience with profound fruit depth and structural complexity.

Appearance. Deep copper to reddish-amber with distinct garnet highlights. It produces a thin, off-white head with poor retention, typical of high-acid beers; clarity is slightly hazy with persistent, fine effervescence.

Aroma. High intensity. A dominant sharp lactic sourness is layered with rich Sangiovese wine notes, including red cherry, plum, and subtle leather. Complexity is enhanced by toasted oak, vanilla, and dark fruit esters. Hop aroma is entirely absent, allowing the vinous and acidic character to lead.

Taste. Initial impression is a bold, clean lactic acidity followed by flavors of tart red grapes and blackberry. The Sangiovese Chianti barrels contribute woody tannins and a vinous fruitiness. Bitterness is undetectable, allowing the sourness to dominate the balance. The finish is remarkably dry and lingering, with notes of oak and tart stone fruit.

Mouthfeel. Medium-full body with a prickly, high carbonation. There is a notable alcohol warmth reflecting the high gravity. A light tannic astringency from the two-year barrel aging adds structure and a crisp, mouth-watering acidity.
