This decadent Imperial Stout presents a masterful sensory transition, opening with a lush, toasted coconut aromatic that yields to deep layers of Filipino cacao nibs and rich Bourbon barrel vanillin. The mid-palate is dominated by a luxurious dark chocolate truffle character, which eventually gives way to a vibrant finish of tart black and red raspberries. As a high-gravity blend, it balances the intense roast of charred malts with the oaky depth of spirit aging. The interplay between the tropical coconut, earthy cocoa, and the sharp, berry-forward acidity creates a complex, evolving experience that feels both indulgent and remarkably structured for its strength.
Appearance. Jet black and completely opaque (40+ SRM). It pours with a thick, creamy, deep tan to dark brown head that exhibits moderate retention. High viscosity is evident, leaving thick, slow-moving legs on the glass.
Aroma. High intensity with a complex layering of sweet toasted coconut, rich dark chocolate, and a bright fruitiness from black and red raspberries. Bourbon-derived notes of oak, vanilla, and caramel weave through a background of roasted coffee and dark-charred malt. Subtle vinous alcohol is present but well-integrated.
Taste. Intensely flavored and decadent, featuring an initial wave of oily coconut and bittersweet chocolate. The mid-palate reveals the earthy depth of Filipino cacao nibs, followed by a sharp, tangy dunk of raspberry fruit. Moderate roasted malt bitterness provides a counterpoint to the high residual sweetness.
