Its sensory profile is defined by an exceptional attenuation that delivers a bone-dry finish. The bouquet is highly complex, weaving together sharp citrus rind, grapefruit, and tart green apple with a sophisticated, earthy funk. On the palate, a lively, mousse-like carbonation elevates the interplay of moderate sourness and subtle oak-derived vanilla. This dry, elegant expression of Lembeek tradition concludes with a lingering, crisp, and remarkably clean aftertaste.
Appearance. Clear golden body (5–6 SRM) with a thick, rocky, mousse-like white head that demonstrates exceptional retention and lively, effervescent lacing.
Aroma. High intensity with a complex, balanced funkiness featuring notes of horse blanket, hay, and leather. Bright fruity esters of green apple, grapefruit, and rhubarb are supported by a faint, grainy wheat malt presence and a hint of aged oak.
Taste. Initial impression is sharply tart and refreshing. Moderate sourness is balanced by a complex wild character rather than hop bitterness. Flavors of green apple and citrus rind dominate, followed by low bready malt and earthy funk. The finish is bone-dry and long, leaving a clean, puckering aftertaste with notes of oak and lemon.
