LAMBIC STYLE - FRUIT
Lambics are wheat beers made with stale hops and fermented with wild yeasts and other microorganisms, traditionally only on the Senne Valley in and around Brussels. The most traditional of the fruit lambics are kriek (cherry) and framboise (raspberry). In modern times, peaches (peche), blackcurrants (cassis), grapes, as well as more exotic fruits are used. Traditional lambics are commonly denoted by the term "oud", which is a reference to "old-style", and these are the most sour. More commonly, though, lambics are sweetened to cut the intense acidity. Serve with sharp cheeses or pickled dishes, or use in the preparation of mussels.

Kriek Mariage Parfait — традиционный, несладкий, нефильтрованный фруктовый Ламбик, изготавливаемый по старинному рецепту. При варке пива на каждый литр молодого ламбика добавляют 400 грамм свежей дикой вишни. После созревания в дубовых бочках в течение 6-8 месяцев пиво проходит естественное очищение и разливается в бутылки, где происходит вторичное брожение, занимающее полгода. Пить пиво рекомендуется в тюльпанообразном бокале, аккуратно наливая напиток из бутылки без дрожжевого осадка.

Приобретя пивоварню, Франк приступил к ее реконструкции. На заводе не было центрального отопления, электричество было только в некоторых помещениях, оборудование устарело. В 1986 году на соседней пивоварне Van Malder он приобрел бочки для ламбика. В 1988 году было оборудовано помещение для производства ламбика и в последующие 2 года прошло несколько тестовых варок. В 1990 году на пивоварне были сварены первые 40 гектолитров ламбика на продажу, а в последующие годы объем производства вырос с 450 гл до более 11300 гл. В 2000 году пивоварня вышла на четвертое место среди бельгийских производителей ламбика и геза.
С началом активного производства возник вопрос дистрибуции готовой продукции. В 1990 году Франк Бон заключил соглашение с пивоварней PALM, по условиям которой пивоварня ПАЛМ обеспечивала дистрибуцию продукции пивоварни Boon в обмен на 50% акций Boon.
В 2012 году было завершено строительство нового здания для производства пива. Его официальное открытие состоялось в апреле 2013 г. Kriek Boon Mariage Parfait consists of 1 year-old heavy lambic flavoured with overripe cherries, 400 grams per litre. Longer aging in small oak barrels gives it its special flavour. The lambic is bottled and stored in an air-conditioned room for six months of secondary fermentation. Kriek Mariage Parfait has an alcohol volume of 8%. It keeps for a minimum 20 years, and is ready to drink after about 2 years in the bottle. This is perfection in kriek beers. Try it and admit that it surpasses the best wine.
The casks give this beer its fine oaky flavour with hints of vanilla and cloves. It boasts a wide mouth with a warm body and roundness reminiscent of dried cherries and wild tastes. This is soft mildness personified.
