Франк с детства был связан с пивоварением: его предки по линии бабушки были пивоварами, а дядя, Дольф Ван Каппеллен, варил пиво в небольшом городке Мертхем. Приобретя пивоварню, Франк приступил к ее реконструкции. На заводе не было центрального отопления, электричество было только в некоторых помещениях, оборудование устарело. В 1986 году на соседней пивоварне Van Malder он приобрел бочки для ламбика. В 1988 году было оборудовано помещение для производства ламбика и в последующие 2 года прошло несколько тестовых варок. В 1990 году на пивоварне были сварены первые 40 гектолитров ламбика на продажу, а в последующие годы объем производства вырос с 450 гл до более 11300 гл. В 2000 году пивоварня вышла на четвертое место среди бельгийских производителей ламбика и геза.
С началом активного производства возник вопрос дистрибуции готовой продукции. В 1990 году Франк Бон заключил соглашение с пивоварней PALM, по условиям которой пивоварня ПАЛМ обеспечивала дистрибуцию продукции пивоварни Boon в обмен на 50% акций Boon.
В 2012 году было завершено строительство нового здания для производства пива. Его официальное открытие состоялось в апреле 2013 г. Raspberry Lambic beer was previously a rarity as it was only brewed for a few weeks in summertime. Brewery Boon revived this old tradition though, as they started producing it regularly again from 1976. Boon Framboise is made by adding 300g raspberries for every liter of very young Lambic beer that has not even aged for a full year. Such young Lambic beer is usually milder with less acidity, allowing for the delicate raspberries to prevail in the taste. For the color to turn into a dark-red hue, a small quantity of cherries are added.
Boon Framboise has a very sweet raspberry aroma, but in the taste the sourness of the lambic and the sweetness of the raspberries are more balanced. With a very light body and high carbonation, this beer is highly refreshing and very easy to drink. Not all beers have to be incredibly complex and Boon Framboise shows why a straightforward and quaffable drink can be of very high quality too.

Framboise Boon lets you enjoy the pure, real taste of freshly picked raspberries. It is a heavenly combination of old and young Lambic, 300 grams of fresh raspberries and 50 grams of cherries per litre.
Framboise Boon is a spontaneously fermented beer made from old and young Lambic that matured in oak barrels. The secret of its high quality and authentic taste lies in the use of real fresh raspberries without any concentrates. Framboise Boon is made with as many as 300 grams of fresh raspberries per litre. We also add some 50 grams of cherries per litre to make the beer milder. We allow the raspberries to ferment together with the young Lambic beer to give Framboise Boon its fine authentic taste. This beer is completely natural: no sweeteners are added.
The raspberries are carefully harvested. They are cleaned immediately after being harvested and any twigs and leaves are removed. They are then frozen straight away and kept in the brewery's special cold storage. This allows us to use fresh raspberries to make Framboise Boon all year round.
