Brouwerij Boon

This vibrant Fruit Lambic is defined by an overwhelming presence of fresh raspberries, with over 300 grams of fruit per liter creating an intense, jammy profile. A blend of young and old spontaneously fermented ales provides a complex backbone of soft lactic acidity and subtle earthy funk. Traditional aging in oak barrels contributes a faint woody structure that tames the fruit's natural tartness. The sensory experience is remarkably fresh and lively, showcasing a bright, berry-forward character that leads into a crisp, refreshing finish. It masterfully balances the wild, funky elements of the base lambic with the lush, sun-ripened sweetness of real fruit.

Appearance. Deep ruby to rose-red with brilliant clarity; features a thick, mousse-like, long-lasting head with a distinct pinkish hue.

Aroma. High intensity of fresh, ripe raspberries dominates the profile, masking much of the base beer. Subtle underlying notes of hay, barnyard funk, and a soft lactic tartness are present, alongside a faint hint of woody oak.

Taste. Initial impression is an explosion of juicy raspberry flavor. The malt presents as a low, wheat-like crackery note. Very low bitterness with no hop flavor. Fermentation character provides a moderate lactic sourness and light goat-like funk that stays well-integrated. The finish is crisp and off-dry with a lingering, natural berry aftertaste.

Mouthfeel. Medium-light body with high, sparkling carbonation that creates a prickly, effervescent sensation. Very low astringency from the fruit skins and no noticeable alcohol warmth.

À Lambic Boon jovem são adicionadas framboesas (250 gr por litro) e frutos silvestres (50 gr por litro). A Framboise Boon tem uma cor linda, rosa escuro. Deve ser guardada na vertical e longe do alcance da luz.

Acompanha bem queijos ácidos (frescos ou secos) de meia cura e também fica excelente com chocolates. Como aperitivo também é uma ótima proposta!

Framboise Boon is characterized by a fresh fruity taste that is achieved by using more than 300 grams of fresh raspberries per litre. Although young lambic complements the flavor, the focus is primarily on the raspberries rather than the lambic. Boon never uses artificial flavourings, only real raspberries. To showcase the bright fruit character, this beer is best consumed when young.

BOON BREWERYFrank Boon, a pioneer of the authentic lambic and gueuze revival, has owned and operated Boon Brewery since 1975. However, the brewery has its roots in the village of Lembeek dating back to 1680 as a farm-brewery and distillery. In 1860, Louis Paul purchased the brewery to exclusively produce lambic and faro. By 1875, gueuze lambic was being bottled. Pierre Troch bought the brewery in 1898, but it changed hands after the economic crisis of 1927, ultimately being acquired by Joseph De Vits. Joseph's son, Rene De Vits, was highly regarded for producing exceptional soft and fine gueuze lambic. As Rene De Vits had no heirs, he sold the brewery to Frank Boon.

Prodotta con lamponi freschi e ciliegie selvatiche, senza aromi, conservanti o coloranti artificiali. Di colore rosso acceso, al naso gli aromi sono fruttati (lamponi soprattutto). Al palato si denota subito una gradevole acidità ben equilibrata con le lievi note dolci date dai frutti rossi (ciliegie). Birra dal corpo medio, intensa sia nel profumo che nel gusto.

Boon Framboise is a blend of old and young lambics with added raspberries. It pours with a high-rise, pink fluffy head. Though obviously full of raspberries, the nose isn’t sweet. A sherberty character is in the forefront, along with a characteristic sour lambic smell and a tart raspberry hint. On the palate though, the raspberries almost taste fresh, and the faintest impression of wheat character. Boon Framboise is clean in the finish, leaving a gentle fizz and a hint of tartness.

A lo largo de la historia, el lambic con frambuesa siempre ha sido una rareza en el universo cervecero belga. Solo ciertos cerveceros la elaboraban de manera limitada en verano. En 1976, Franck Boon decide poner esos lambics tan especiales nuevamente de moda. De tal forma, más de 300g de frambuesas frescas se añaden por cada litro de lambic joven. Una leve cantidad de cerezas también se añade. El conjunto semadura en barril de roble, brindando un maravilloso resultado.
A primera vista, el mantorojo rubí es magnífico. Una espuma fina y poco persistente lo corona, un clásico del lambic. Ennariz desvela aromas obviamente muy afrutados a frambuesa y, de forma más general, a frutos rojos. Enboca recuerda igualmente dichas notas afrutadas, aunque las mismas sean más equilibradas gracias a una leve acidez. La última impresión en boca es seca, a la vez que afrutada.
Esta cerveza belga, elaborada en la ciudad de Lembeek, puede recordar al vino en ciertas de sus facetas. Desvelará todos sus aromas si se sirve en una copa flauta.
