Fruit Lambic 6 º
This 2020 vintage captures a vibrant sensory dance between one and two-year-old lambics and Bergeron apricots sourced from the Ardèche region. The profile is defined by an intense, fleshy stone fruit character that melds with the wild complexity of the base blend. On the nose, sun-ripened apricots lead into deep funk, characterized by notes of damp hay and goatish esters. The palate is markedly sour, as the fresher lambic components provide a sharp lactic brightness that cuts through the juicy apricot depths. It finishes bone-dry with light tannins from the fruit skins and oak, leaving a lingering, refreshing acidity.
Appearance. Deep golden-orange (SRM 7-9) with a slight fruit haze. It features a fine, off-white, mousse-like head with moderate retention and light lacing.
Aroma. High intensity of fermented Bergeron apricots, offering a fleshy and slightly floral fruit character. This is layered over a complex lambic funk including hay, horse blanket, and a sharp lactic tang. Low cracker-like wheat malt; no hop aroma.
Taste. Initial impression is sharply tart and fruity. Deep flavors of unsweetened apricot nectar and skin predominate, supported by earthy Brettanomyces funk. Bitterness is nearly absent (under 10 IBU), replaced by a firm lactic acidity. The finish is very dry, crisp, and puckering, with a long-lingering fruit and oak aftertaste.
Mouthfeel. Medium-light body with moderate carbonation. It possesses a high tart, puckering quality without harshness. Very low alcohol warmth; slight tannic astringency from the fruit skins and aged barrels.

In deze blend combineren de brouwers de zachte lambiek met een frissere lambiek. Deze lambiek ‘danst’ samen met de abrikozen in de gistingstank. Ook de abrikozen zijn Bergerons uit Frankrijk. Deze abrikozen kenmerken zich door hun sappige en vlezige karakter met een diepe smaak.
