Blender.

Blender. Formation is a sophisticated, mixed-fermentation Saison that bridges the gap between farmhouse funk and vinous elegance. A blend of five barrel-aged bases, it greets the senses with a vibrant fusion of sun-ripened Apricots and zesty Oranges, bolstered by the distinctive lime and tropical fruit punch of Motueka hops. The extended maturation for up to eighteen months in Ex Red Wine French Oak imparts a subtle tannic structure and delicate vanillin, grounding the bright acidity with refined wood character. Expect a rustic, peppery yeast profile typical of the style, finishing exceptionally dry with a lingering, sophisticated interplay of tart fruit and aged oak complexity.

Appearance. Deep gold to pale orange in color (8-10 SRM); hazy and unfiltered appearance with a dense, ivory head that exhibits moderate retention and classic Belgian lacing.

Aroma. High intensity; a complex bouquet of jammy Apricots and fresh Oranges layered over rustic, peppery yeast esters. Motueka hops provide distinct lime zest and tropical fruit notes. Background notes of vinous red wine and toasted French Oak add depth, supported by a light lactic tartness and minimal grainy malt.

Taste. Bright citrus and stone fruit flavors lead, followed by a soft, grainy malt palate. Moderate hop bitterness is complemented by a refreshing tangy acidity. Motueka hops contribute a lemon-lime snap. The fermentation character is spicy and slightly funky, integrated with subtle red wine tannins. The finish is bone-dry and highly attenuated, lingering with a tart, woody complexity.

Mouthfeel. Medium-light body with very high, effervescent carbonation. Crisp and prickly on the tongue. Very low alcohol warmth is present, accompanied by a light, drying tannic astringency from the French Oak and fruit skins.
