This session-strength Wild Specialty Beer is a vibrant sensory explosion of stone and tropical fruit. Dominated by the lush, pulpy character of Mango and Peach, it offers a dense, nectar-like profile that defies its low alcohol content. The addition of Mirabelle introduces a delicate floral sweetness and a nuanced plum-like tartness, rounding out the bold primary fruits. A sharp lactic acidity slices through the thick, smoothie-like texture, ensuring a refreshing finish despite the heavy fruit load. It represents a modern, juice-forward interpretation of wild fermentation where the natural vibrancy of the added fruit takes center stage.
Appearance. Saturated, opaque golden-orange hue (SRM 6-8), reminiscent of fresh fruit nectar. Pours with a dense but short-lived creamy off-white head; lacing is minimal due to high fruit solids.
Aroma. High intensity. Explosive aromatics of ripe Mango and fleshy Peach dominate the nose immediately. Subtle honeyed and floral notes of Mirabelle plum emerge as the beer warms. A clean, sharp lactic sourness provides a bright backdrop, with no perceptible hop or malt presence.
Taste. Initial impression is a burst of tangy fruit puree. Sweet Mango and juicy Peach flavors are primary, followed by the distinctive, slightly tart skin-like flavor of Mirabelle. Lactic acidity is moderate-high, effectively balancing the residual fruit sugars. Bitterness is absent (near 0 IBU). The finish is clean and intensely fruit-forward with a lingering tropical tang.
Mouthfeel. Medium-full body, remarkably thick and creamy for the 3.5% ABV due to the smoothie-style fruit additions. Carbonation is moderate. No alcohol warmth. Smooth texture with no grain or fruit skin astringency.
